Lasagna di Carnevale

The Neapolitan Carnival Lasagna at Flora, served this week only, Tuesday, February 17, to Thursday, February 19.

Naples and the whole Campania region celebrate Martedì Grasso, Fat Tuesday, with the Neapolitan Carnival Lasagna. It’s the signature dish that marks the final moment of abundance before the austerity of Lent begins on Ash Wednesday.

The Neapolitan Carnival Lasagna isn’t the standard Sunday one that you’ve probably made at home. It’s richer, more elaborate, and made for large family gatherings. It starts with semolina pasta sheets and slow-cooked Neapolitan ragù, layered with tiny beef meatballs, ricotta (instead of béchamel), diced provola, hard-boiled egg slices, and mozzarella. In Italy, nothing is held back in the last chance to eat freely before Lent.

The traditional dish – a favorite of everyone from King Ferdinand II to Flora, Emiliano’s mom in Cilento – is on the menu from Tuesday, February 17, to Thursday, February 19 only.
